Ingredients for crumble :
- 2 cups all-purpose flour
- 1/2 cup white sugar
- 1/4 teaspoon fine salt
- 3/4 teaspoon baking powder
- 3/4 cup frozen unsalted butter, grated
- 1 1/2 teaspoon vanilla extract
- 2 large egg yolks
- 1 to 2 teaspoons apple cider vinegar
Ingredients for fruit mixture:
- 3 generous cups fresh berries
- 1/2 cup white sugar
- 1 teaspoon lemon zest
- 2 teaspoons fresh lemon juice
- 1 to 4 teaspoons cornstarch, depending on how firm you want the fruit filling (I used 4 tsp)
- Pinch of cayenne
Recipe:
- Take a big bowl and add dry ingredients: flour, sugar, salt and baking powder. Using a whisk mix it well.
- Grate in ice cold butter into the dry ingredients. Mix gently but thoroughly with fork.
- Add vanilla extract, egg yolks, apple cider vinegar. Mix everything together. Dough should form soft ball when held in hand. If required add little more of less apple cider viegar.
- Take half of the crumble mixture and with gentle hand press spread that on the pie dish.
- In a separate bowl, mix in berries. Raspberries, black berries and blue berries work really well. Add lemon zest, lemon juice, sugar and cornstarch. Mix it really well so no lumps of cornstarch remains and sugar is evenly coated on berries.
- Pour the berry mixture on pie dish and top with second half of crumble mixture spreading evenly.
- Bake at 375 degrees F for 40- 45 mins.
- Let this cool for 10 mins before serving. Pairs really well with ice cream or yogurt.
