Gluten-free waffles
Ingredients:
- 2 cups almond flour
- 6 tbsp tapioca flour
- 3 tsp baking powder
- 1/4 tsp salt
- Zest of 1 orange
- 1/2 cup almond milk
- 2 medium eggs
- 1 tbsp maple syrup
- 2 tsp vanilla extract
Recipe:
- In a large bowl, combine almond flour, tapioca flour, baking powder, and salt. Whisk for a couple of minutes to smooth out any lumps.
- In a separate bowl, whisk eggs, milk, maple syrup, vanilla extract, and orange zest together.
- Mix the wet ingredients into the dry ingredients and combine thoroughly.
- Distribute the batter evenly, this recipe makes 4 large waffles or 8 small waffles depending on the waffle maker.
- Serve with fresh berries and maple syrup. Enjoy!
- If you have leftovers, use air-tight ziplock bags and store them in the fridge. To reheat, either microwave for 30 seconds or use a toaster at medium setting.
