Christmas Fruit Cake
Ingredients:
- 1 and 1/2 cups all purpose flour
- 1/2 cup almond flour
- 1 tsp Baking Powder
- 1/2 Salt
- 1/2 cup granulated sugar
- 1 Tsp Pure Vanilla Extract
- 3 large eggs at room temperature
- 1/2 Tsp Almond Extract
- 1/4 Cup Milk (reduced fat or whole milk)
- 1/3 cup dark raisins
- 1/4 cup roasted walnuts, finely chopped
- 1/3 cup red or green cherries, sliced by quarter
- 2/3 cup mixed candied peel
- Zest of one lemon
Recipe:
- Pre-requisites: Preheat oven to 350F, Butter a loaf pan and line with parchment paper
- Mix all-purpose flour, almond flour, salt, baking powder with lemon zest using a whisk
- In electric mixture using Padel attachment, mix butter with sugar until light and fluffy
- Add eggs one at a time, scraping the sides to make sure everything is well blended
- Add vanilla and almond extract, mix it gently and add dried fruit
- Finally add half the flour mixture just until incorporated. Then beat in the milk and then add remaining flour mixture
- Pour the batter into prepared pan and bake in the middle rack of over for about 60 minutes
- Remove from oven and let it sit on cooling rack for at least 10 mins before cutting. Best is to store it away for a day, the cake gets settled really well and gets really moist and soft
