Orange Cranberry Cake
Ingredients:
- Zest of one large orange
- 1/4 cup freshly squeezed orange juice
- 1/4 cup milk room temperature
- 6 tbsp unsalted butter, at room temperature
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs at room temperature
- 1 1/2 cup fresh cranberries and 1/2 tbsp all purpose flour
Ingredients for the glaze:
- 1 cup powdered sugar
- 2 tbsp fresh orange juice
- 1 tsp orange zest
Recipe:
- Preheat oven to 350˚F and butter a loaf pan then dust with flour dusting the excess flour
- Sift together salt, baking powder and flour and set aside
- Combine milk, zest of one orange and orange juice and set aside
- In a mixing bowl mix sugar and butter until well combined for about 2 minutes
- Mix in 2 eggs, one at a time until well blended
- Add flour mixture in 2 parts, alternating with the milk mixture and mixing on medium/low speed just until incorporated with each addition. Scrape the sides of the bowl with a spatula as needed
- Coat cranberries with 1/2 Tbsp flour then fold them into the batter just until incorporated
- Spread this batter in prepared pan and bake for about 50 mins at 350F in the middle rack
- Let the cake cool in pan after taking out of oven and then place on cooling rack. Wait it to be completely cooled before applying glaze
- Mix powder sugar, zest and orange juice to prepare glaze, add juice slowly to make sure consistency is thick.
- Pour the glaze over cake, let it spread itself. Cake is ready to enjoy!
